8 eggs
4 cups sugar
1 rounded teaspoon nutmeg
1 tablespoon cinnamon
1 teaspoon cloves
1 teaspoon baking powder
5 cups flour
1 pound of shelled, chopped nuts (walnuts or pecans recommended)
The German name of this recipe means “pepper-nuts.” It does not mean peppermint (I have seen that translation, but it’s incorrect). I have seen recipes for this very traditional German Christmas cookie that use actual ground black pepper. The use of ground pepper is probably more authentic than this recipe but not much. I don’t care for black pepper in cookies, so I omitted it, but you can toss about a teaspoon of ground black pepper into the spice mixture if you want to cook like a Medieval Teutonic baker.
Sift the flour, baking powder, nutmeg, cinnamon and cloves together. Put aside.
Beat sugar and eggs together for 15 minutes. No, I’m not kidding. Set the timer. A great deal of your success depends on your being able to follow directions. 15 minutes.
Add the flour mixture and blend well. Toss in the nuts and mix them in. Roll into small rounded balls and place on a greased baking sheet. Bake at 350° F for 12 to 15 minutes.

2 tablespoons butter or margarine
2 eggs
1 cup brown sugar, firmly packed
5 tablespoons flour
1/8 teaspoon baking soda
1 cup chopped nuts
1 teaspoon vanilla
Powdered sugar
Melt butter or margarine in a 9-inch square pan and remove from heat.
Beat eggs lightly in a large bowl.
In another bowl, combine sugar, flour, baking soda and nuts. Combine with eggs. Add vanilla and mix well.
Pour batter into pan with melted butter/margarine. DO NOT STIR. Do you hear me? Do not stir.
Bake 20 minutes at 350°. Hey, I said do not stir. Get the spoon away from the bowl.
When done, cool on a rack. Cut in 18 rectangles and dust with powdered sugar.
